Millet-Beet-Peanut

This is a rich and satisfying dish, prepared quite simply. It can be served as is, beside some beans or vegetables, or topped with a mushroom gravy.

1 cup Millet, rinsed

1 cup millet, rinsed

1/4 cup short grain brown rice

2 1/2 cups water

1 small beet, cubed

parsley, minced

2 tsp peanut butter

1/4 tsp sea salt

In a medium saucepan, bring water to a boil and add salt. Then add millet, rice, salt and beet. Bring back to a boil, lower flame, cover and cook until soft, checking periodically to make sure there is enough water to cook. When done, remove from flame and set aside, covered. Blend in peanut butter and add parsley. Mix, serve and enjoy!
