Why Freeze Lemons?

We’ve all heard about squeezing some lemon juice in water, to ease a sore throat or cold, cleanse the mouth or body. Lemon juice is tangy, refreshing and a nice addition to almost any recipe item. But did you know that the most beneficial way is to consume the entire lemon?

Lemon rind may be up to 10x more powerful than lemon juice! We can grate lemon rind and add it to our favorite recipes, but we consume only a small bit this way. Current research shows that the most beneficial way to consume lemons, is to freeze them!

When we freeze a lemon, the taste of the rind is much milder and less bitter. It becomes much easier to add a fair amount to greens, salad, vegetables, etc… Start by choosing fresh lemons, without soft spots, black spots or bruises. Wash and then dry your lemons carefully and place them in a secured bag. Then you are ready to freeze them.

When you are ready to use them, remove from the freezer and grate the entire lemon or just a portion of it. You can now sprinkle the grated lemon on your vegetables. Cooking the grated lemon may lose up to 40% of it’s beneficial properties.

Lemons have a positive effect on a variety of ills, including cancer and high blood pressure. They are also good for eliminating toxins from the body and restoring healthy liver function. Lemon peels contain antibacterial, anti-fungal and anti-microbial fighting properties.
