Tofu Frittata

1 package Tofu

1 tbs arrowroot (dissolved in 1/4 cup water)

1 small onion, cubed

1/2 cup broccoli, cut into mouth-size pieces

8 button mushrooms, sliced

1 tbs olive oil

2 tsp sea salt

2 scallions, chopped

3 tsp nutritional yeast

fresh basil to taste

Add onion to fry pan along with olive oil and heat over medium flame while stirring, until softened. Add a few pinches of sea salt. Add mushrooms and broccoli and continue to cook and stir until softened. preheat oven to 375 degrees F. In a food processor, add tofu, arrowroot, basil (optional), nutritional yeast and sea salt. Blend and then taste, adjusting salt if needed.

Add vegetables to tofu mixture and mix well. Oil a casserole dish and place mixture inside. bake, uncovered, for 45 minutes or until golden brown. Top with scallions. Slice and serve with rice and vegetables.

Options: Add sliced olives as a topping or experiment with different vegetables or herbs
