2 cups rolled oats, ground-up
2 cups ww pastry flour
1 1/2 cup sliced almonds
1/8 tsp sea salt
1/2 cup oil
3/4 cup cup maple syrup
2 tsp almond extract
1/2 tsp baking soda
Preheat oven to 350. Lay down baking mats on cookie sheet (or oil cookie sheet). Mix wet and dry ingredients separately, saving 1/2 cup almonds for top of cookies. Pour wet ingredients into dry and mix. Scoop onto cookie sheet and flatten with your hands. Sprinkle almond slices on top and bake for 20-30 minutes or until brown on edges. Allow to cool before serving.
