There’s a variety of mushrooms available today and each one has a unique flavor and healing ability. Mushrooms help build immunity, improve digestion, affect memory, clarity, cognition and give energy. The most popular mushrooms today include Matsutake, Shiitake, Reishi, Chaga, Lion’s Main, Turkey Tail and Cordyceps. Mushrooms can be used in a myraid of ways in the kitchen including pickling, soups, gravies, stir-fries, salads, with Beans, Temeph, Tofu.
1 cup Oyster Mushrooms, chopped
1 1/2 cups fresh water
1 3/4 tbs kuzu
soy sauce to taste
Place mushrooms and water in a small pot and bring to a boil. Add soy sauce to desired taste. Cook on low flame, covered until softened. Mix kuzu with a small bit of cold water to blend and then whisk into simmering mushroom-water. Whisk to blend. Gravy should be of thick consistency. Taste and add a small amount of soy sauce if flavor is too mild.
