2 cups strawberries, sliced
2 tbs chia seeds
3 tbs maple syrup & 1/4 cup maple syrup
1 1/2 cups rolled oats
1 cup oat flour
1/4 tsp sea salt
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup Miyako vegan butter (or sub walnut oil)
1/2 tsp vanilla
Place strawberries, 3 tbs maple syrup and chia seeds in a saucepan and heat over medium flame while stirring. When fruit is softened, mash with a fork and set aside. Place oats, flour salt, cinnamon and baking soda in a mixing bowl and blend. Add remaining maple syrup, vegan butter and vanilla and stir. Preheat oven to 325 degrees F. Place about half of the oat mixture on an oiled baking dish and flatten. Top with fruit mixture and gently spread evenly on top. Place the remaining oat mixture on top and distribute evenly with hands. Bake for about 30 minutes.
