It’s the way they are prepared. Most school districts have no idea how to cook and present vegetables. They are focused on Meat and Dairy. As a result, they unknowingly have turned children off to eating healthier fare. Food Service Directors across the US have complained to the State that kids don’t like vegetables and they end up in the Trash. My experience with kids and vegetables is just the opposite: Kids Love vegetables. It’s just that they are rarely exposed to one that has been prepared simply. My suggestion: Create cooking and gardening classes in schools across the US. When students have hands-on experience with plants, they are more likely to eat them. I wrote this letter to the San Francisco Chronicle.
