We love the taste of fresh Corn, especially Masa. Masa can be used to make a variety of dishes including Tortilla, Tamale and Pupusa. We are lucky to find organic Masa at the Berkeley Farmers’ Market every Saturday. Tonight we made Tortillas and topped them with Black Beans and sautéed Broccolini Spears. We first formed balls of masa and rolled them in our hands. Next, we carefully placed them in the Wooden Tortilla Press and pressed them until thin. We roasted them on the stovetop on high heat, until they bubbled. The Black Beans (cooked slowly in the Solar Oven) went on top along with the Broccolini Spears. So simple…yet so satisfying.
