Creamy Scarlet Turnip-Cauliflower Soup

As the days grow cooler, hot creamy soups are most satisfying and nurturing. This one has a most unique flavor as it is made simply, with few ingredients so the natural flavors are able to shine. The amount of salt you use is essential to creating this soup.

4 large Scarlet Turnips (or white if you can’t find scarlet), cut into medium pieces

1/2 cauliflower, cut into medium pieces

I tsp grated ginger

sea salt to taste

water to cover

Place all ingredients, except salt in soup pot and bring to a boil. Add a conservative amount of salt, say 2 tsp. to start. Lower flame and simmer until soft. Taste and add more salt, if necessary. Continue to add and taste until soup is neither flat nor salty. Blend until smooth and creamy. Top with scallions, parsley or cilantro.
