Filling:
3 cups apples, seeded, cored and cut into cubes (keep the skin on)
1 cup apple juice
2 1/2 tbs kuzu
pinch of sea salt
Add apple juice to cooking pot and bring to a boil. Add sea salt, apples and stir. Lower flame, cover and cook until apples are soft. Mix kuzu in just enough water to blend and then whisk into apple juice, while stirring. When mixture is thickened, remove from pot and blend. Set aside.
Crumble:
1 cup rolled oats
1 cup rolled oats, blended
1/4 cup crushed almonds
1/4 tsp baking soda
1/4 tsp sea salt
4 tbs maple syrup
4 tbs olive oil
Mix these ingredients with a wooden spoon until blended. Consistency should be a bit wet, but crumbly.
Preheat oven to 375 degrees F
Oil a covered casserole pan and place 1/2 of the crumble mixture on the bottom of the pan and use your hands to flatten and distribute mixture. Add blended apple mixture and flatten. Mix crushed almonds with remaining crumb mixture and distribute evenly on top. bake for 40 minutes.
