Happy New Year Won-Tons

We celebrated the Chinese New Year yesterday in class by making vegetable Won-Tons. We were honored to have the Parents of a Chinese student in class, making the skins by hand and showing us different ways to fold.  The flavors of ginger, soy, sesame oil and the vegetables has made this popular with all students for many years.  We sometimes serve the vegetables alone and Families have requested this recipe over and over again.

CHINESE NEW YEAR WON-TONS

(serves 25)

2 cups finely shredded green cabbage

1  carrot, finely diced

1/4 cup arame sea vegetable, covered with water and soaked for 2 minutes (optional)

2 green onions, minced

1 teaspoon ginger, minced

2 teaspoons soy sauce

1/2 teaspoon sea salt

50 won ton wrappers

3 teaspoons sesame or olive oil

a few drops of dark sesame oil                

1 orange or tangerine as garnish

 

Heat oil in a skillet.  Add garlic and ginger, fry 1 minute while stirring. Add cabbage, carrot, arame, salt and cook for 2 to 3 minutes or until soft. Add soy sauce and sesame oil, stir and cook for 1 minute. Remove from heat and add green onions. Place wonton wrapper diagonally on a cutting board or plate in front of you. Fill with 1 teaspoon of cabbage mixture.  Wet the edge of wrapper and fold in half to create a triangle.  Press the sides together to seal. Bring the two folded corners to the back of the wrapper, overlap, and seal with water. Place in salted boiling water and cook gently for 30 seconds…or… place on a vegetable steamer lined with cabbage leaves and steam for 5-10 minutes.
